Dearest Spring,You asked for a unique Christmas dessert recipe, and I’m hoping 'unique and dessert' will do it. It’s not a 'Christmas recipe', so if you want me to dig a little deeper in my bag of gifts, say so. I can tell you the 'yumminess' of this dessert. It used to be my favorite, 'til the missus refused to let me indulge—she thought I was getting just a little too chubby. Can you imagine? Skinny Santa, bah! It is all about you, so just let me know if you need something different. Hugs and Merry Christmas, Santa Santa’s Favorite Mandarin Orange Cake2 C. Sugar 2 C. Flour 2 tsp. Baking Soda ½ tsp. Salt 2 cans Mandarin Oranges, 11 0z., drained 2 eggs Beat eggs, add oranges and other ingredients. Beat 4 minutes. Pour into a 9” x 13” pan. Bake at 350 degrees for 35-40 minutes. Topping¾ C. Brown Sugar 3 T. Milk 2 T. Butter Bring to a boil, pour over cake when you take it from the oven. Serve warm or cooled—may be served with whipped cream if desired.

I suppose only someone truly naughty would know what to do with her: Now if this just isn't up to your usual standards, you let me know (though I don't see how you could possibly turn her away...heck, if I was thirty years younger and didn't have the missus breathing down my neck, I'd take her for a ride. In my sleigh, of course).

HO HO HO Pixi! You have spent all year giving perk and cheer to all those around you I think it's time Santa rewarded you for being an all round nice person! You have spread joy at any opportunity and it's been noted that you have a gift of picking people up when they are feeling down. On this your birthday I wish you a day of joy and many happy returns. Maybe Logan can help with those? Well of course. How fun - a birthday present from my Secret Santa! I love it! Leaning Logan is always a fav of mine.
