Each of the following posts lists out the contents of the Buffy and Angel DVDs. Hopefully this will help everyone get the MOST out of their DVD purchases. If you see anything I missed, let me know so I can add it. Thanks! Later Edit: I should clarify. The lists below are the contents found on the BtVS and AtS DVD Collections for Region 1 (US and Canada Only). Disc 3:
Buffy Abroad (4:15) deals with the international success of the show. The usual suspects provide brief interviews about their experiences at international fan conventions, and the piece also contains short scenes of Buffy in other languages.
Casting Buffy (6:51) features casting director Marcia Shulman (and others) describing what the crew looked for in each character and how each actor came to be on the show.
Demonology – A Slayer's Guide (11:27): "Licensed Demonologist" Danny Strong (Jonathan) hosts this fun segment about Buffy's most memorable creatures. Various cast and crew discuss the concept for each demon and how the make-up and effects artists were able to translate them from page to screen. Any Buffy fan should get a kick out of Strong's introductions for each segment and the light-hearted nature of the piece. Its only downfall is that it's not longer.
Action Heroes! The Stunts of Buffy (11:28) is an excellent look at the work performed by stunt coordinator John Medlen and his crew. Interview segments centered on what it takes to plan, choreography, and "sell" a good fight scene are intercut with behind-the-scenes footage of the talented stunt people at work. More rough footage of the staging of various stunts would have been great, but this featurette does provide a glimpse into the tough (and often thankless) job of a stunt person.
Disc 6:
The Story of Season 5 (27:50) is the now-standard run-through of the major highlights of the season. Most of our friends are here (Sarah Michelle and Alyson are the notable absences from all portions of the interview footage). Each member of the cast and crew shares memories of working on the episodes and comment briefly on the theme or purpose of each story within the larger arc. There isn't anything huge revealed here, but after hearing Joss' quick thoughts on "The Gift," I really wish he had recorded a commentary for the episode.
Natural Causes (9:20) focuses entirely on "The Body." Some of what is covered here can also be found on Joss' commentary for the episode, but this featurette is good in that it provides some insight from other cast and crew about how the "The Body" affected them.
Spotlight on Dawn (7:26) is, well, a spotlight on the newest member of The Buffyverse. Michelle Trachtenberg and other cast and crew discuss the character and point out how she changed the dynamic of the show.
The Other:
Scripts for "The Replacement," "Fool For Love," "Into the Woods," and "Checkpoint," are provided. Each can be accessed from the menu screens and can be browsed using the "step" buttons on your remote.
The set also contains two minutes of Outtakes (found on disc three). This is the standard fare: flubbed lines and on-set high jinks, but it's the Buffy cast so it's that much funnier.
Rounding out the extras is a Still Gallery with 29 photos, and a Trailer (0:39) for the Buffy The Vampire Slayer: Chaos Bleeds video game.
