What about putting hair-ball medicine on a paw? My current cat eats it just fine, but the other cat I had never would unless she had to lick it off her fur. You know, that anti-hairball food actually works wonders. I have a long-haired cat, and her hairballs went away completely. As for medicines - I have a cat piller. You wrap all sharp parts of the cat in a towel, then squeeze the jaw hinge, then take the piller (a stick with a plunger and a slot at one end to put the pill in) and stick it back almost to the gag reflex, push the plunger, and then hold the mouth shut 'till the kitty gives up and swallows.
