Chef Ramsey says to let your turkey rest for as long as you cooked it. Helps the bird reabsorb juices. Huh.
I want to make his steamed Christmas pudding and whiskey creme topping, too. He makes it all look so easy and simple.

I guess the skin holds the heat in, and Chef must have anticipated that question because he said that the hot gravy heats it up even further. I am going to try it with my next turkey. Might not work as well with turkeys over 12 pounds though.

Well, looks like Diane called it. After four days of "Who ARE you, hell baby, and what did you do with my Emily?", I felt a molar popping through today.
Right after a mid-afternoon bout of inconsolable crying, which she has NEVER done, not even when she was a newborn.
A little ibuprofen and some ice cubes, and she was almost normal the rest of the evening.

Snowing like crazy here. Only the 10th Christmas since records began (1888) with measurable snow. Gorgeous. (About an inch but the last instances was 3 tenths of an inch in 1993.)
